Notes:This is not the usual type cachaca that you find imported to the United States - this one is made in small batches in a copper alambic type still rather than a column still, as are many of the more well known varieties. The distillation is similar to cognac and grappa production - and it shows. It is also aged for 2-3 years in oak and jequitiba barrels. Most cachaca imported into the states is not aged.

Appearance: Clear light yellow like a young whisky spirit of the same age- clear, limpid, on swirling leaves thick coating on glass and some long legs .
 
First Impression: Fresh bread, yeasty, sweet, lemon, herbal/ floral notes .

Taste: Remarkably smooth, nice oak and pepper edge to it with citrus,spice and salty overtones. Delicious and understated. A rather thick, round mouthfeel to it and a lingering finish that is somehow sweet and dry.

Drinks: Adds a extra oak dimension and and a nice dry but fruity taste to various rum type drinks.This is a positive for some drinks and a complication for others. It is however a great cachaca to have for mixing or to enjoy on its own (an unusual idea for a cachaca). A little experimentation may be needed but it shows a lot of promise for anyone looking for a new spirit to mix with.

Cigars: Good with a lighter type/size of cigar.  

Final Thoughts: This Cacahca is is a wonderful example of what is possible with artisanal production. A standout in cachaca in distillation, age and complexity. Much better than a lot of rum in its price range.  

Bottle/Packaging: A rather simple and unassuming clear glass bottle with paper labels. Upside is you can appreciate the color and clarity of the spirit. The downside is it can get lost in the sea of bottles in a large display.
