Notes: Stored eigty-two feet down in chalk quarries excavated by the Romans over 2,000 years ago the champagne can rest without noise, light or vibration for the years necessary to create a grand champagne. In the case of the brut réserve, three years, vintage years, six or more years will pass before disgorment, then more rest and marrying of the wines. This is the minimum for the wines, but I suspect older wines are also used in the blending to give the depth, character, character and complexity to this champagne.
Appearance: Lovely pale golden color with many small bubbles.
First Impression: Toasty, biscuity, alltogether lovely.
Taste: Lovely almost delicate pastry tastes to start on the tongue, with a plump, Rubenesque body/taste to it. Fruity,sumptuous notes that make it a delight of layers of flavor, with buttery nut notes and hints of vanilla, with numerous yellow gold fruit notes. Lovely tiny bubbles add delicate lightness to the body. Nicely balanced with a lovely tail (to steal a sake descriptor for finish) .
Drinks and Food: Something that does not overwhelm or bury the champagne. Cheeses, pate,raw oysters, savory biscuits, all are wonderful and indeed heightened by this champagne.
Final Thoughts: A favorite of ours, with a lot of flavor of all types going on and a very approachable type of champagne.
Bottle: More or less standard champagne bottle style, color and shape but with certain touches that distinguish it from the rest. Embossed stylized vines in the gold neckwrap,with a collar of black with blue stripes at the bottom of the foil with "CH" in a logo on a gold square, a small lozenge shaped paper Label with "Brut Réserve " above the main label
