An Aviation variation using Pisco and Cognac ( swapping out Chartreuse and Gin)

2 oz Macchu Pisco
.5 oz lemon juice
1/4-1/2 oz Luxardo Maraschino Liqueur
1/4 oz Camus XO Borderies Cognac
Shake gin, lemon and luxardo with ice. Strain into a cocktail glass.
Float the Camus XO Borderies Cognac
Garnish with cherry
You can also choose to sweeten with agave or a little simple syrup
