Well done ginger extract that has a lot of flavor and potential for both cocktails and cooking.

Notes: Finger Lakes Harvest is a relatively new company that specializes in a variety of liquid delights made from locally grown ( in the Finger Lakes of Upstate New York) fruits, vegetables, herbs, and spices. They produce a variety of Drinks mixers, Shrubs, Health Tonics, Health Shots, Bitters, and Extracts.

This is their Cold Extracted Ginger made with organic whole fresh ginger, organic apple cider vinegar, organic cane sugar, and water, . Their other bitters include Horseradish, Tumeric, Cranberry, Raspberry, Tart Cherry, Grapefruit, Blood Orange, Celery, Lime Sour. All are sugar-free. No flavor enhancers, preservatives, or colorants are ever used.

Appearance: Translucent cider yellow-brown ( apple cider vinegar colored) with bits of finely grated ginger floating in it.

First Impression: Ginger high notes with base notes of apple cider vinegar playing nicely with each other.

Taste: Great apple cider vinegar taste with a fair amount of ginger, which thankfully is in the background rather than the foreground, or I should say it is not overwhelming ginger – a refreshing change from some ginger extracts I have tried lately that taste like they could take the paint off a car.

Drinks: but I think it has great potential for a cocktail. With all the new attention given to shrubs, sours, and organic, this is a great bitter to add to your mixology cabinet!

Also a great flavoring for meats, vegetables of fish.

Final Thoughts: A great ginger and vinegar bitter that is not overwhelming to you or your drinks.
